Halibut (Halibut has a mild and gentle flavor that is similar to the sweet taste of clam or crab.)

When compared to other fish, it resembles mild white flesh such as Tilapia. Besides, the meat of this large flatfish is firmer and thicker than cod.

Halibut has such a mild and gentle flavor, so it pairs greatly with stronger seasonings, such as basil, lemon juice, and pesto.

*Chablis, Vermentino, Sauvignon Blanc, and Pinot Gris are the best wine pairings with Halibut as they will not crush the delicate flavor's of the fish.

NC. Bigeye Tuna (Bigeye tuna has a mild, meaty flavor, with a higher fat content than yellowfin tuna. Sashimi lovers prefer it.

*Sauvignon Blanc make a lovely complement to tuna, especially if seared and served with a citrus glaze. Chablis is made from Pinot Gris grapes and is dry with notes of apple, pear, grapefruit, and lemon. The citrus and acidity pair well with tuna.

Mahi-mahi (Like many other tropical fish, mahi mahi is semi-mild and sweet tasting. It's similar to halibut in terms of flakiness, but also similar to swordfish in its denseness.
