Sorry I was closed all day. What was suppose to be a routine visit to RMH turned out to be a all day affair! Getting old sucks!

FRESH JUMBO SNOW CRAB CLUSTERS

FRESH HALIBUT (Halibut is a popular white fish, the largest of the flatfish, with firm, lean, meaty flesh and mild, slightly sweet flavor. Some common methods for cooking it include steaming, baking, poaching braising and pan-frying. In terms of nutrition, halibut offers a bounty of micronutrients—notably selenium, vitamin B6, vitamin B12, and niacin—and plenty of high-quality protein. It also contains just a hint of fat at 1 gram per serving, making it an ideal fish for those who need a low-fat diet.

*Halibut's closest match in the wine world is Chardonnay. This wine is fairly neutral in flavor, but depending on its aging process, it can pick up the flavors of, say, an oak barrel.

FRESH CAROLINA BIGEYE TUNA Bigeye tuna has a mild, meaty flavor, with a higher fat content than yellowfin tuna. Sashimi lovers prefer it. Tuna is an excellent source of vitamin B12, an essential vitamin needed to make DNA. Vitamin B12 also helps you to form new red blood cells and prevent the development of anemia.

The high levels of omega-3 fatty acids in tuna fish may help to reduce the level of omega-6 fatty acids and LDL cholesterol that can accumulate inside the arteries of the heart. Studies have shown that eating more omega-3 is associated with reduced rates of cardiovascular disease, including heart attacks.

*Light-bodied white wines like Sauvignon Blanc and Pinot Grigio work well, as their crisp acidity and citrus undertones provide a refreshing contrast to the tuna’s richness. For those who prefer red wine, lighter options such as Pinot Noir or Merlot can be chosen to avoid overpowering the delicate flavors of the fish.

FRESH JUMBO BLACK SEA BASS (Black sea bass has pure white flesh that is very rich with a sweet, buttery flavor. Many chefs, including Jasper White, a recognized seafood expert, believe the black sea bass has few rivals in this part of the world.) Black sea bass is low in calories and fat, is a good source of selenium, and contains omega-3 fatty acids. Amazing!!

*One of the best wines to serve with sea bass is Pinot Gris. The bright acidity of the wine awakens the flavors of the otherwise mild fish. Other zesty, refreshing wines to pair with sea bass include Sauvignon Blanc, Grüner Veltliner, and Albariño.

FRESH DRY PACK SCALLOPS (Dry pack scallops offer a sweet and delicate taste with no preservatives added. Hailing from the cool waters off of New England the flA medium and meatier fish needs a lil bit more from its wine. Your go-to wines include dry rosé, Chardonnay and zippy new world Sauvignon Blanc.avor of the ocean never tasted so sweet. With a flavor so fresh a mild amount of seasoning and lemon helps enhance the delicate taste of these dry pack scallops.)

*Seared scallops: Pinot Noir, Chardonnay (with some oak), Alsace Pinot – Gris. – Baked scallops: Sparkling wine from California, Champagne (Chardonnay-dominant).

FRESH SCOTTISH SALMON (Scottish Salmon is one of the more mild flavored salmon on the market. The higher-fat content of these fish lend to a buttery texture mouth-feel.) Great Sashimi!!

*As a general rule, rich oily fish like Salmon pair wonderfully with full-bodied white wines like oak-aged Chardonnay, Viognier, Marsanne, White Rioja, White Burgundy, and White Pinot Noir. However, depending on the preparation method and sauce, you can easily pair Salmon with rosé or light-bodied, low-tannin red wines.
