I am pleased to announce that Pickford’s is now working with MT. CRAWFORD Creamery! MT. CRAWFORD Creamery has the best tasting Dairy Products in the Valley. I will be carrying a variety of different cheeses, butters, and cream. Pickford’s is dedicated to work with local business. Lets support each other in local organic products.

Swordfish
Swordfish is fulled flavored, with a slightly sweet taste. The firm and meaty texture allows the fish to be particularly rich and juicy.

Flavor Profile: Distinctive, yet mild. Like a cross between Bass and Halibut.

Black Sea Bass
Flavor Profile: Lean and white with delicate flavor

These smaller sea bass tend to run in the 2-5 pound range and are almost exclusively caught in traps set by the stone crab guys. They’d rather catch stones, but these little guys are very light and tender. Not the thick huge larger sea bass style like Chilean Sea Bass or Bluenose.
These are very mild, very sweet, very light and flaky.

Texture Profile: Moderately Firm, Small Flakes

Harvest Location(s): Atlantic coastal waters from the Gulf of Maine to the Florida Keys, concentrating in areas from Cape Cod, Massachusetts to Cape Canaveral, Florida.

Sustainability: Reduced fishing mortality on immature black sea bass to increase spawning stock biomass and improved yield from fishery.

Big Eye Tuna
Bigeye tuna is one of the preferred species for the preparation for sashimi. With a high fat content, bigeye is also among the most desirable species for grilling. Its mild flavor adapts well to numerous applications.

Smelts
Smelts have an unusual taste (some have written that fresh smelts smell a bit like cucumbers – even of watermelons), but most will agree they are delicious when fried…especially right after harvest, and even as a Maine breakfast. Scaled and gutted, dipped in milk and flour and fried briefly in hot oil, it is a memorable experience. Smelt fillets, oily and high in fat, can also be poached or baked.

Flounder
Flavor Profile: Mild Sweet Taste

Texture Profile: Lean, Firm, Flakey

 It’s born upright, but falls to one side, then the eye on the bottom migrates around to the top. They lie on the bottom, bury in and wait for shrimp and baitfish to come buy then ambush. They feed mostly on shrimp, crabs and small baitfish, so their flavor is extremely mild and the texture is very light, almost to a fault. Flounder are not bottom feeders!
